I make no secret of how much I love watermelon. Seriously. I start pining for it (and other fresh things that only taste good in the summer… like tomatoes) in January. My kids and I will sit down and eat an entire watermelon in less than 2 days, and that time seems to have gotten shorter since getting pregnant with the newest little-to-be.
Baby loves some watermelon.
As much as I love this magnificent fruit of the gods, even I have to get creative with how to eat it at times. I stumbled onto a watermelon smoothie recipe a few years ago and have since tweaked it a bit here and there to my liking. Enjoy!
2 cups watermelon, precut into cubes and frozen
1/4 cup chopped cucumber (don’t freeze!)
A squeeze of lime juice (fresh is best, but if you’re broke and in a pinch, the cheap stuff will do)
2 teaspoons of honey or agave nectar
3-6 ice cubes
Fresh mint leaves (optional garnish or stir in right before serving)
It’s super easy. Combine everything but the mint leaves into your favorite blender– I use my trusty Ninja. Blend until smooth and, if you’re feeling frisky, serve it in a stemless wine glass with optional minty things. Fancy.
